Put bleed on all sides of master pages, where you want bleeds to appear.
If you have objects running across the gutter, then quark will take what it
needs from across that gutter. If you have objects that run up to the
gutter, but not across it, then stop at the gutter. Bleed is for areas to
be Cut off by the paper cutter, not for bad saddle stitch jobs by printers.
Do not worry about bleed in the gutter, just be exact in stoping objects at
the gutter if they are not suppose to be on both pages of a spread. And
unless you have picture boxes that repeat on all pages across the gutter in
the same place, leave them out of master pages, my opinion.
