If you have a choice, Export to MPEG-4 (.mp4) with .264 codec and VBR2 (Multi-pass option). This will give you the most quality per file size. Loading to YouTube it does not really matter, you can have multi GB files loaded and YouTube will re-render them to smaller file sizes. So if that is your destination, keep the quality high and large. You could use VBR1 in that case which saves some time and uses simpler compression. You can use even less compression to give YouTube better files to recompress. You should make shorted sections of your tutorial. A 4hr lecture will not go down well for anyone involved...
