In Illustrator you can select type, then go to TYPE > CREATE OUTLINES. It
does just that... the type cease to be type. It becomes objects shaped like
letters.

This feature can be used to create masks and interesting fills (like
filling the type with a gradient or color blend). In addition it has the
advantage of simplifying the file by eliminating the need for fonts.
