I believe Illustrator does not have a built-in ability to "Collect for Output" There are add-ons
you can buy to do it.
It may have been possible in long ago earlier versions. But in their zeal to protect ther font
material, some of that may have disappeared.
InDesign has a "Collect for output" option.
Ariel usually comes with the Microsoft Office Suite.
Is Ariel active in your font list? You can use the Macs Font Book program to active it is it is there.

I can't go back to the original computer right now, but every time I open the file in Illustrator it gives me the warning about changing fonts, as the source font doesn't seem to be there. I just recently loaded CS2 on this computer.

It is trying to substitute whatever the original file was with Helvetica oblique. I have since changed all the fonts and labels back to Arial italic. And it still gives me this message.
