You can set the RGB color mode in Illustrator to an sRGB color space in the preferences, then just convert the color space for the file to the RGB option. Do this on a copy of don't save it for later editing, or you will lose all the CMYK setup work.

I've already built quite a few AI figures using a CMYK palette that was
given to me by the client. What is the best and fastest way to convert to
sRGB?
