Okay, more on this technique, at least for lemons. I was considering these dried or salted, so didn't think of this file. but I guess you could consider them pickled.

These are called for in a number of middle eastern recipes, both period and modern.
In the case below, the oil is only used to seal the juice and contents from the air, and things in it.
